  • 20g fresh yeast (or 1 packet of dry yeast)
  • 500g flour (semi-whole grain organic flour)
  • 60g brown sugar
  • 1 small teaspoon salt
  • 1 teaspoon ground cinnamon
  • 110 ml milk
  • 200g applesauce (or pear compote)
  • 1 jar of strawberry jam
  • 1 egg yolk

Steps

  1. Crumble the fresh yeast into a bowl and add the flour, brown sugar, salt, cinnamon, milk, and compote. Knead well for 10 minutes.
  2. Let the dough rise under a damp cloth for 2 hours.
  3. Divide the dough into 3 equal pieces. Roll out the 3 pieces of dough with a rolling pin into circles of equal size.
  4. Spread Bonne Maman strawberry jam on the first disc of dough. Place the second disc on top and spread with Bonne Maman strawberry jam again. Finish with the last disc of dough.
  5. Place a small circle in the middle (a glass, a small mold, a cookie cutter, etc.). Cut the dough into 8 pieces from this circle, like a cake.
  6. Twist two pieces of dough together and shape them into a snowflake. Press each tip firmly together so that the dough sticks.
  7. Let the dough rise again for 45 minutes to 1 hour. Brush with egg yolk and bake at 180°C for 20-25 minutes.
