- 400 g flour
- 100 g ground hazelnuts
- 70 g sugar (brown)
- 3 teaspoons speculoos spice
- 2 pinches of salt
- 250 g butter, at room temperature
- 70 g water
- 1 jar of Bonne Maman strawberry jam
- 1 egg yolk

Mix the dry ingredients: flour, sugar, hazelnut powder, spices and salt. Then add the butter in small pieces. Rub the mixture well with your fingertips and then add the water.

Form a ball. Leave it to rest in the refrigerator for at least 30 minutes.

Halve the dough, placing 1/3 on one side and 2/3 on the other. Roll out both pieces of dough with a rolling pin. Place the larger piece of dough in a tart tin. Prick the base of the dough with a fork and spread the Bonne Maman strawberry jam on top.

Cut the second piece of dough into strips about 1 cm wide. Form a lattice pattern as shown in the video. Work from the top and bottom until you achieve the desired result.

Brush with egg yolk.

Bake in a preheated oven at 180 °C for 40 minutes. Then leave to cool.
