- 20g fresh baker's yeast
- 320g flour
- 60g brown sugar
- 1 pinch of salt
- 150ml milk
- 1 egg
- 30g butter at room temperature
- 1 liter of cooking oil
- 50g brown sugar
- 1 tablespoon of four-spice mix
- 1 jar of apricot jam

Crumble the fresh yeast into a bowl and add the flour, sugar, salt, milk, and egg. Then add the butter in pieces and knead again for 10 minutes.

Cover the bowl with a damp cloth and let it rise for 2 hours.

Defrost the dough, roll it out with a rolling pin, and place the figures on top. Leave to rise for another hour.

Heat the oil in a large pot (it should be between 150°C and 180°C, but never exceed 180°C). Place the men in the oil (a little tip to avoid damaging them: cut the baking paper around them and dip them in the oil with it). When they are golden brown, turn the men over to bake the other side.

Remove them after cooking and place them on a paper towel.

Mix the sugar with the spices and roll the figures in it. Use a piping bag to decorate the figures with Bonne Maman apricot jam.
