Giant peach crumble with peach jam
- 1 kg peaches
- 50g Bonne Maman Peach Jam
- Fresh mint
- 2 tbsp cornstarch
- 15 ml lemon juice
- 250 g flour
- 100 g almond flour (ground almonds)
- 200 g butter, softened
- 100 g cane sugar
- 1.5 tsp baking powder
Steps
- Prepare the fruit: Wash and dice the peaches. Set aside about 3 peaches and slice them into wedges for the topping.
- Mix the filling: In a large mixing bowl, combine the diced peaches with the cornstarch, fresh lemon juice, and chopped mint. Stir in the Bonne Maman Peach Jam. Transfer the mixture into a baking dish.
- Make the crumble: In another bowl, mix all the dry ingredients: flour, almond flour, cane sugar, and baking powder. Incorporate the softened butter using your hands until you reach a crumbly, sandy texture.
- Assemble: Spread the dough over the fruit. Keep it chunky to ensure a nice texture.
- Decorate and bake: Arrange the reserved peach slices on top for decoration. Bake for 30 minutes at 190°C (375°F).
